We always want the best cuts of meat to use in our meals at the Black Swan, be it beef, chicken, venison or lamb, because of this we decided to use Cockburns Butchers found in Bedale.
Cockburns are specialists in game including pheasant, venison, duck, rabbit and wild boar.
Where possible all meat is farmed locally to the dales, allowing them to build up good relationships with farmers.
